Thanks
Ian, Karen and I would like to thank our friends and neighbours for all their kind thoughts and words at the passing of Joy, our mother and wife.  We have been greatly touched by the sentiments expressed.  They have helped us to cope at this terribly sad and difficult time.                                                           Keith (Betts).

A Thank you Message
Gladys Russell would like to thanks all members of the British Legion who stood ‘Guard of Honour’, also the Standard Bearer.  Thank you all for giving your time willingly for Bill. Thank you to Col. George Ramsay for his help and administration to enable our dear Bill Flack to depart with honour and dignity.  Thank you to all who attended the Service on 2nd April at Lyminge Parish Church to say farewell.  Bill will be sadly missed by me, his friends, and many who knew him.

Thanks
Sue, Brian and family would like to thank everyone for the cards, flowers and kind thoughts during Sue’s recent illness.

CLIMB
Children Living With Inherited Metabolic Diseases
I am attempting to raise funds for this little-known charity.  I have organised a second-hand book stall at my place of work, where people donate in return for a book.  I should like to ask local villagers that if they have any second-hand books that they would like to contribute to the stall, I would gladly collect them.  Any books not ‘sold’ I then pass onto a local charity in Cheriton, so nothing goes to waste.  I can be contacted for further information about CLIMB, or collections on 862850.  Thanking you in advance, Mrs. Fran Kelsey.

Neighbourhood Watch
1. Carpet Sellers
There are still some itinerant carpet sellers in our area.  Police advise not to buy goods or services from any unsolicited callers.  Always get more than one quote or ask a trusted friend to recommend someone.
2. Warning about a mobile ‘phone scam
If you get a message that says, “Please call me on 09011 500065 Urgent. KB’ – ignore it – this is a premium rate number, charged at £5.00 a minute.  People who do call the number will hear an engaged tone.  This is not a real engaged tone, simply a recorded sound that makes you call again and again – and you are charged for each time you get through.
3. Bogus Water Board workers are out and about.
Do not let anyone into your house without asking for identification.  If you are at all worried, close the door and ring the organization they say they are from – genuine officials won’t mind.  Needless to say, the bogus people will look round your house and steal goods if you let them in.

On Tuesday 28 May there will be an evening visit to Higham Park Garden at Bridge.  Over the past few years the new owners have been restoring both the house and the gardens, which had been neglected over many years.  Refreshments will be available in the tea rooms.  Meet at the Library Car Park at 6.15pm for car sharing, or at Bridge for 7.00pm.  Non-members are most welcome.  The cost will be £3.00, which includes a tour of the garden.

Gardening Hints for May
Although best done in the autumn, it is not too late to dig organic material into your soil.  This will give your plants and vegetables a boost and in return, you will have wonderful flowers and tasty vegetables.  If you do not make your own compost, now is the time to think about it.  Even the smallest garden can accommodate a compost bin.  Shepway District Council supply very reasonably priced bins (order forms in the Library) as part of their recycling policy.
If you are tempted to put out tender plants after some warm sunny days, remember frosts can occur into late May.  However, if you cannot resist the urge to plant, then keeps some fleece handy to throw over the plants when frost is forecast.
N.B.  Bad news for gardeners… ecologists at Imperial College report that due to global warming, snails are producing more young which are hatching up to two months earlier!

Jubilee Pudding

Text Box: This recipe must have been devised for Queen Victoria’s Jubilee since I found it in an old recipe book!  (Apologies to all who cook in grams – I don’t!)

4 oz flour
1 whole egg and 1 white
3 oz butter
4oz currants
2 tablespoonfuls caster sugar
A little peel if liked
¼ teaspoonful bicarbonate of soda
Milk

Cream the butter and sugar together, and the beaten eggs, then the dry ingredients mixed together and enough milk to make a thickish batter.  Put the mixture into a greased basin with a double piece of greased paper on top and steam for 1½ hours.  This should serve 3-4 people (but they’ll be small servings)

OK – well that sounds a bit dull!  But at the end of the recipe it says, “Serve with treacle, or wine foam sauce”.  So I researched “wine foam sauce” and it is the Italian custard, “Zabaione” – which is delicious!  The recipe gives: 1 egg, 1 dessertspoonful of sugar, ¼ pint of sherry or Marsala and a strip of lemon peel (for 3 people).  In Elizabeth David’s book “Italian Food”, the Zabaione recipe is for each person allow the yolks of 2 eggs, two teaspoons of sugar and I small sherry glassful of Marsala.

Whichever recipe you follow, beat the eggs and sugar until light and frothy, stir in the Marsala, and put the whole mixture in a bowl over a pan of simmering water.  Stir continuously as for a custard, taking care that the Zabaione does not curdle.  It must not boil.

A “modern” version of this pudding may be to make the cakey bit in little dishes (ramekins or dariole moulds) and cook them in a bain marie in the oven. The sauce could be spooned onto individual plates and the puddings turned out onto the centre of the plates.  Decorate with fruit (e.g. strawberries or raspberries) and rose petals, then a shaking of icing sugar – sounds a bit better that way!  Anybody else got a “Jubilee” recipe??

Sabre Conservatories, Windows and Doors
We manufacture beautiful double-glazed PVC-u units in our own factory to exacting standards.  We can also boast of being only one of five companies in the UK manufacturing the fantastic slim-line Marshall Tufflex system Vertical Sliding Sash Window, which caries a severe weather rating.  So, if you have old box sash style windows and believe PVC-u would look out of place, think again!  Maintenance free, sealed units, spring loaded balances, slim-line appearance and decorative 'horns' make our Vertical Slider one of the best on the market.  Remember, we are suppliers to the trade both in the UK and Europe - they know a good window when they see one!
